If you were to walk up to me on the street and ask me what my favourite food was I would tell you it was pasta or cheese or even pasta with cheese. To cut to the chase I have eaten a lot of pasta and cheese over the years and one day I may even share my super easy cheese sauce recipe with you. It is a staple University student meal but I am here to give you a recipe that makes it just that little bit healthier.
Ingredients
- Courgetti
- Prawns
- Parmesan Cheese
- Oil of choice
- A Clove of Garlic (Crushed) or Garlic Paste
- The first thing you want to is put a dribble of oil and your garlic in a pan and place it on the hob over a low heat. I happened to use vegetable oil and garlic paste as they were what I have to hand.
- Next I added the courgette mixing it in the garlic oil mixture for a couple of minutes until it was soft and coated before adding the parmesan. You can put in as much parmesan or as little as you want, I like to be a little more on the generous side.
- Lastly add in your prawns and stir everything through thoroughly. I like to use pre-cooked prawns as they are quick and easy just to throw in and heat through.
And that is it. A quick easy meal whether that’s just for a light lunch like I have it or even making a little more and having it as a meal. Its quick with easy simple ingredients that even fussy eaters like myself can enjoy.
